SUNNY-SIDE UP EGGS WITH MADEO āNDUJA
BREAKFAST, CALABRIAN STYLE
The simplest weekend breakfast in Italy ā two fresh eggs, a squeeze of āNduja, and a piece of crusty bread for the āscarpetta.ā
INGREDIENTS
- 2 Fresh Eggs
- Madeo āNduja Squeezy ā use as much as your spicy heart desires!
- Extra Virgin Olive Oil ā just a drizzle
- Crusty Bread ā essential for the āscarpettaā / dipping
- A pinch of sea salt
STEP-BY-STEP INSTRUCTIONS
Prep the Pan
Place a small frying pan (cast iron is perfect for this) over medium heat and add a light drizzle of olive oil.
Release the Flavor
Squeeze a generous amount of Madeo āNduja into the warm oil. Use a spoon to spread it around slightly. As it heats up, the āNduja will begin to melt, turning the oil into a vibrant, spicy red sauce.
Crack the Eggs
Carefully crack the eggs directly into the pan, right on top of or next to the melting āNduja.
The Perfect Cook
Lower the heat slightly. You want the whites to set completely while keeping the yolks runny. If the whites are taking too long, you can put a lid on the pan for about 30 seconds to trap the steam.
