What Is ‘Nduja?

A spicy, spreadable Calabrian salami — soft as butter, bold as fire. Born in the mountains of southern Italy, slow-smoked with Calabrian chili peppers.

‘Nduja (pronounced en-DOO-yah) comes from the remote mountain village of Spilinga in Calabria. Its name traces to the French andouille — a cured sausage — but it took on a fiery life of its own in the Italian south.

The original recipe used every humble cut of pork with an abundance of sun-dried Calabrian chilies. Today it is one of Italy’s most celebrated regional specialties.

How It’s Made

Four ingredients. Decades of know-how.

Pork. Selected fatty cuts — shoulder, belly, jowl — ground to a creamy paste.

Calabrian chili. Sun-dried and ground whole. It gives ‘Nduja both its red color and its heat.

Sea salt. The only preservative. No nitrites, no fillers, no shortcuts.

Natural casing & smoke. Stuffed, tied, and slowly cold-smoked over beech wood for up to 90 days.

Five Ways To Use It

Spread on warm toasted bread — the simplest way to taste it.
• Stir into tomato sauces, ragù or arrabbiata for instant depth.
• Fold into scrambled eggs, frittata, or shakshuka.
• Top pizza, focaccia, flatbread — it melts into a glossy oil.
